Spicy Beef and Black Bean Chili

Tonight's dinner is so easy, you're gonna love me for it! If you have any leftover meatloaf from yesterday, you can use it! Assuming you don't have a whole pound of it left, you can just cook a little more turkey or beef accordingly.

I found this recipe a couple years back in a Weight Watchers cookbook and it's been a family favorite ever since! 22 grams of protein, 8.6 grams of fiber, and only 6 points per 1 cup! And the leftovers? Pair with a bit of rice, roll it up into a tortilla shell, and voila! A burrito for lunch!
Spicy Beef & Black Bean Chili

1 pound ground turkey and/or beef
1 tbsp taco seasoning
1 can (15oz) whole kernel corn, drained
1 can (15oz) black beans, undrained
1 1/4 cup pico de gallo
1 cup water
Pepper to taste

Cook beef in large pot over medium-high heat. Drain if necessary. Add the remaining ingredients and bring to a boil, stirring frequently. Reduce heat to medium-low and let simmer for 7 minutes, until heated through. Serve hot with a dallop of sour cream and a couple fishy crackers. Or tortilla chips ;]
